How to make berry stuffed french toast
While you may be thinking that it sounds like a lot of work to stuff a piece of bread, this recipe is actually really easy! You simply make a sandwich and then cook it like french toast.
Let’s get started! First, whisk your eggs, cinnamon, and almond extract. Don’t skimp on the extract or cinnamon! These really bring a lot of flavor that you’d miss if you didn’t add them.
Next, mix together the low-fat ricotta and sliced strawberries. Spread this mixture onto two slices of bread, then top each with another slice of bread. Squish the bread together so that the filling doesn’t leak out. Mine weren’t perfectly sealed and worked anyway.
Heat a skillet over medium heat. Add a little cooking spray or butter to keep the french toast from sticking.
Now dip the french toasts into the egg mixture and then place on the skillet, one at a time. Cook for several minutes on both sides, until the egg is fully cooked and the bread looks golden. You may need to sear the sides for a few seconds each too, if your bread is thick and still gooey on the sides.
Serve warm, right off the skillet. Sprinkle with a teeny bit of powdered sugar for extra flare – but it’s great without any!
