School Lunch Supplies for Healthy Lunches

As many of you know, my kids have been making their own lunches since the 1st grade.  I learned my lesson with my oldest son that they should be packing their own food as soon as he traded the ENTIRE lunch I made for him for a single piece of candy! (I believe it was a single candy corn!) ha ha..  At that moment I decided to let them decide what they were going to put in their own lunches, as long as it met my standards of course!   From that was born our required checklist.

Each lunch, I needed them to have a grain, protein, vegetable, and a fruit. I had a chart similar to this one hanging on our fridge for their reference for many years.  They would refer to it for ideas, and then make their lunch.   (Print this one here)

My kids are older now. We no longer have the hanging list, but they still pack their own lunches.

Erica (my 13 year old) gets the most creative.  My boys pretty much eat the same thing each day, but Erica makes green salads, fruit salads, sandwiches, wraps, and more!

That’s why we love the Mighty Nest supplies!  From the first time I saw their products, I knew she would love them- and I was right!  We recently went camping and she packed her favorite fruit salad, a veggie sandwich, and apples with peanut butter.  Mighty Nest has stainless steel boxes, reusable sandwich bags, air tight containers for the drippy fruit salads she likes, and the most fun and adorable lunch bags we’ve found online!

Lunch Details

Fruit salad

For years, Erica has been making fruit salad with carrots and yogurt. She is 13 in the photo above, and here she is making the EXACT same fruit salad at 9!    The recipe is simple:

  • 1 apple, chopped
  • 1 carrot, chopped
  • 1/2 cup slice strawberries
  • 2 tablespoons yogurt

Combine all ingredients and chill until you are ready to eat.

Veggie Sandwich

  • 2 slices whole wheat bread
  • 1 tablespoon hummus
  • 1/2 cucumber, sliced
  • 1 handful of spinach leaves

Spread hummus on bread.  Add sliced cucumbers and spinach.

Sunflower Butter with Apples

  • 1 cup sunflower seeds, shelled and roasted
  • 2 TBL Olive Oil
  • 1 tsp honey
  • 1 dash salt
  • 1/2 tsp cinnamon

Blend all in a food processor.  Slice apples and serve with sunbutter

 Lunch Packing Supplies

We are teaming up with Mighty Nest because we want your kids to be part of the process as well!  Don’t just pack their lunches for them, let them help! Let your kids:

  • Choose the menu (print the checklist above)
  • Cut the fruit
  • Make their own sandwich!
  • Fill their own containers
  • Be responsible to bring their lunch supplies home from school
  • Prepare their salads

Anything that will get the kids involved in the process of making their own lunch is going to give them kitchen skills they need and ownership over what they choose to bring to school.

We do good with good choices and this printable with the categories helps! They seem to fizzle out with emptying their bags when they get home, as I’m not always off work by then. I also worry about making something too delicate. I’m sure their lunches look like they’ve been through a ride in the dryer by the time they get to lunch. She’s also learning how to make the food by herself as well as make good healthy choices. Having them pack their own lunches also helps with grocery shopping. They have to think about lunches realistically and participate in shopping. It cuts back on just asking for junk food because they know what needs to be in their lunch.
